chocolate sourdough cupcakes

INGREDIENTS: 

  • 2 cups flour 250g
  • 1/2 cup coconut oil 220g
  • 1/2 cup peak sourdough starter 100g
  • 1 cup water 240g
  • 2 eggs
  • 2 cups sugar
  • 1 tsp salt
  • 1 tsp finely ground coffee (optional)
  • 2 tsp vanilla
  • 3/4 cup cocoa
  • 1 cup whole milk
  • 2 tsp baking soda

ASSEMBLY:

  1. Mix starter, flour, coconut oil, and water in bowl and cover for 8-24 hours.
  2. Preheat oven to 350°F.
  3. Mix sugar, salt, [and coffee] in a large bowl. 
  4. Mix in eggs, vanilla, cocoa powder, and milk.
  5. Mix in sourdough mixture from step 1. Mix until smooth.
  6. Add baking soda; mix well.
  7. Grease muffin tin, whether or not you use cupcake liners.
  8. Fill each well less than half way, or it will make a big mess.
  9. Bake until a toothpick comes out clean: 15-20 minutes.
